At Roqueta, we take pride in offering our visitors the opportunity to enjoy the exquisite taste of our oil, made from olives harvested from our very own groves. Every step of our production process is crucial to ensuring the quality and exceptional flavor of our oil.

The olive harvest is carried out at the optimal moment, a critical decision that directly impacts the quality of the resulting oil. We use mechanical shaking to gather a considerable amount of olives without damaging the trees, combined with manual shaking for the remaining olives, ensuring that each fruit is carefully collected.

The freshness and health of the olives are paramount, which is why we pay special attention to handling during harvest. Before the olives enter the mill, we conduct a meticulous selection, choosing only the best quality ones to guarantee optimal flavor.

Once pressed, our olives are left to rest in tanks, where the oil acquires its characteristic yellow-green sheen. Hygienic packaging and legal labeling are equally important, even for small productions, ensuring that our product meets the highest standards.
